"Sunny Summer" cheesecake

I truly love to make no bake cheesecakes. They are so easy to make and delicious.

Ingredients for cookie base:

Jagodzianki: Polish Sweet Buns with Blueberries

Jagodzianki* are traditional Polish sweet buns. Usually they are baked during Summer. You can buy them in every cake shop/bakery in Poland.

How To Make Pasta With Lemon And Broccoli (rajiv tiwari)

Ingredients:

* 6 ounces dried pasta shapes in variety, such as fusilli, penne, shell, etc.
* 2 small, boneless chicken breasts
* Salt to taste
* Freshly ground pepper
* 2 tablespoons butter
* 1 tablespoon olive oil
* 1 ? cloves garlic, smashed through a garlic press
* ? large or 1 small bunch broccoli, stems and florets cut into small pieces
* ? cup chicken broth
* Juice of ? lemon
* Zest of ? lemon
* ? cup walnuts, chopped and toasted at 180? C for 2-4 minutes
* ? cup freshly grated parmesan cheese, plus extra for serving

Directions:

1. Start your pasta recipe by bringing a large pot of water to a boil and salting it generously. Cook the pasta till al dente to have pasta noodles of a perfect consistency. Drain it and put it to the pot, adding 1 ? tablespoons of butter on top.

2. Half way through cooking the pasta, start patting the chicken dry with a clean kitchen towel for the pasta recipe.

3. Season the chicken on all sides with salt and pepper. In a very large pan, put the olive oil and remaining ? tablespoon of butter and keep over a medium flame. Cook until completely melted and foamy and then add the chicken. Saut? brown and cooked through for the pasta recipe. Cook the chicken over a low flame to avoid burning it.


4. Remove the chicken from the pan and put on to a cutting board and cut into thin slices for later in the pasta recipe.

5. Keeping the flame low, add the garlic to the same pan that you cooked the chicken in. Keep stirring for a little while till the garlic is fragrant but not brown.

6. Add the broccoli, the broth and salt to taste for the sauce of the pasta recipe. Keep stirring to dissolve the browned bits on the bottom of the pan.

7. Cover the pan and turn the flame to medium. Keep cooking until the broccoli is just tender but not overcooked.

8. Add the chicken to the pan as well as lemon juice, zest, walnuts and the buttered pasta. Stir thoroughly to mix the pasta recipe completely.

9. The pasta recipe should be full of flavour and have a lemony zing. Add more seasoning according to your taste.

10. Add the parmesan cheese to the pasta recipe just before serving.

11. Your pasta recipe is ready to be enjoyed by all!

LAVENDER & HONEY TEACAKES

Thyme gnocchi with peas and ricotta






Very easy and delicious vegetarian gnocchi. A must try :)

Summer fruits in Earl-Grey-Lemon syrup

Lemon Poached Chicken & Potato Salad

Ingredients


4 small chicken breast fillets, trimmed
1 lemon, rind removed (see hint), juiced
750g kipfler or pink fir potatoes, scrubbed
100ml extra-virgin olive oil
150g baby green beans, trimmed, halved
1 bunch asparagus, trimmed, cut into thirds crossways
1 tablespoon dill leaves, chopped
2 tablespoons chopped chives

Method

Place chicken in a large, deep frying pan with lemon rind. Cover with cold water. Bring to the boil over medium heat. Reduce heat to low and simmer for 12 minutes. Remove chicken from pan. Cool slightly. Slice across the grain.

Meanwhile, cook potatoes in a large saucepan of boiling water for 15 to 20 minutes or until tender. Using tongs, transfer to a chopping board. Stand for 10 minutes or until still warm but cool enough to handle. Peel potatoes and cut into chunks. Place in a large bowl.

Using a fork, whisk oil, 1/4 cup lemon juice and salt and pepper in a jug. Drizzle three-quarters of the dressing over potato. Stir gently to coat.

Place beans and asparagus in a heatproof bowl. Cover with boiling water. Stand for 3 minutes. Drain. Add to potato with chicken, dill and chives. Drizzle with remaining dressing. Toss gently to combine. Season with pepper. Serve.

Hint: Use a potato peeler to remove the rind from a lemon, avoiding the white pith which can make the poaching liquid taste bitter.

This recipe would take 20 mins for preparation & 30 mins to cook.

Lemon Chicken Hunan Style

* 3 large chicken breasts, boned and skinned, cut in half
* 1/4 cup flour
* 1 egg
* 1/4 teaspoon baking soda
* 2 tablespoons cornstarch
* 2 tablespoons vegetable oil
* 1 teaspoon salt
* 1 teaspoon soy sauce

Mix flour, egg, baking soda, cornstarch, oil, salt and soy sauce. Dip chicken into batter and fry until golden. Drain. Cut chicken crosswise into 1/2-inch slices. Arrange on a heated platter. Keep warm. Pour Lemon Sauce over and garnish with lemon slices.

Lemon Sauce:
* 1/2 cup water
* 1/2 teaspoon lemon zest
* 1/4 cup lemon juice
* 1/4 cup honey
* 1 tablespoon catsup
* 1/2 teaspoon chicken bouillon
* 1/2 teaspoon salt
* 1 clove garlic, minced
* 1 tablespoon cornstarch
* 1 tablespoon cold water

Heat water, lemon zest, lemon juice, honey, catsup, chicken bouillon, salt and garlic to boiling. Mix cornstarch and water and stir in. Cook and stir for 30 seconds or until thickened. Serve hot.
