Lemon Chicken Hunan Style

Hunan Province is the home of the sweet and sour sauce.
* 3 large chicken breasts, boned and skinned, cut in half
* 1/4 cup flour
* 1 egg
* 1/4 teaspoon baking soda
* 2 tablespoons cornstarch
* 2 tablespoons vegetable oil
* 1 teaspoon salt
* 1 teaspoon soy sauce

Mix flour, egg, baking soda, cornstarch, oil, salt and soy sauce. Dip chicken into batter and fry until golden. Drain. Cut chicken crosswise into 1/2-inch slices. Arrange on a heated platter. Keep warm. Pour Lemon Sauce over and garnish with lemon slices.

Lemon Sauce:
* 1/2 cup water
* 1/2 teaspoon lemon zest
* 1/4 cup lemon juice
* 1/4 cup honey
* 1 tablespoon catsup
* 1/2 teaspoon chicken bouillon
* 1/2 teaspoon salt
* 1 clove garlic, minced
* 1 tablespoon cornstarch
* 1 tablespoon cold water

Heat water, lemon zest, lemon juice, honey, catsup, chicken bouillon, salt and garlic to boiling. Mix cornstarch and water and stir in. Cook and stir for 30 seconds or until thickened. Serve hot.

Gobi Manchurian

Ingredients:

1 medium Cauliflower(Gobi)- seperated into small florets
3tbsp All purpose flour
2tbsp Corn flour
1/4tsp Pepper powder
2tsp Vinegar
1tsp Soy sauce
2tbsp tomato sauce
1tbsp red chilli sauce
1 tbsp Ginger- garlic paste
1 Onion
5 garlic chopped
2 Green chillies
1/4 cup Spring onions
Oil for frying
Salt

Method:

1)Clean the cauliflower and soak into hot water mixed with turmeric and salt.Drain the water completely and pat dry with a kitchen towel.
2)In a bowl mix the flours ,salt,pepper powder and 1tbsp ginger-garlic paste with little water.
3)Heat oil in a pan.Dip each florets in the flour mixture and deep fry it until golden brown.
4)Remove from oil and drain it in paper towels.
5)Heat 2 tbsp of oil in a pan.Add chopped onion,garlic,green chillies and ginger-garlic paste.Saute well for 3 minutes.
6)Add soy sauce,tomato ketchup,red chilli sauce and vinegar.Saute well.Adjust the salt.
7)Add the fried Gobi florets and mix well until all the florets are well coated with the sauce.
8)Garnish with  Spring Onion .Serve hot .

Okra Pepper Salt

This is an excellent dish prepared using 'Okra' -In Chinese Style . I  got this great  recipe from my friend Geetha.It just tastes awesome . On top of it,  it is very easy to prepare. Thank you so much  Geetha for sharing .Give it a try  and am sure your family will love this .

Ingredients:

Okra - 100g
Chopped Onion - 1,medium
Green chillies - 2
Garlic cloves -4
Corn flour -2tsp
All purpose flour -1tsp
Spring onion - 2 stalks (cut diagonally for garnishing)
Freshly grounded pepper -1tsp
Salt to taste
Egg - 1(optional)
Oil for frying

Method:

1.Cut the okra diagonally and keep it aside.
2.In a bowl mix together all purpose flour,1/2tsp cornflour,salt,1/2tsp pepper power and egg.(if you don't like to use egg ,just add little  water to the flour ).Add okra to this and mix well.
3.Heat oil in a pan.Roll the okra mixture to the remaining corn flour and deep fry it.
4.In a pan heat 1tbsp oil and saute chopped onion,garlic and green chillies till the onion become soft.
5.Add the fried okra , pepper powder and salt.Garnish with spring onion.
5.Serve hot as an appetizer or  serve with rice .

Mixed Noodles




Ingredients:

Noodles -250g
Mixed vegetables(i used carrot,cauliflower,beans,green peas,red bell pepper)
Chicken breast - 2
egg -2
Soy sauce - 1tbsp
Hot and sweet chilli sauce(sambal) - 2tbsp
Spring onion - 2 tbsp
Vegetable oil - 2tbsp

Method:

Marinate the chicken with 1tbsp chilli sauce, soy sauce and salt.for half an hour.Then cook the chicken  and keep it aside.Boil the vegetables.Cook the noodles and drain them.
In a wok add oil and saute the vegetables and chicken.Add the eggs and scramble it .Than add the noodles and mix well.Add the remaining chilli sauce and saute well.Garnish with spring onions.Serve hot.

Chilli Chicken

I originally posted this recipe last week. Had to delete this due to the technical issues I faced yesterday. So here I am posting it again.



Ingredients:

Boneless chicken (cubed) - 200g
Dark Soya Sauce - 2 tsp
Corn flour - 2tbsp
Egg - 1
Capsicum - 1
Garlic(chopped) - 1tbsp
Green chillies - 3 big
Salt - to taste
Chinese chilli sauce- 1tbsp
Green Onion - 1/4 cup
Oil to fry

Method:

Marinate the chicken with 1tsp soya sauce,egg,salt,1tbsp corn flour.keep it aside for 15 minutes.Deep fry them in vegetable oil.keep it aside.
In a pan add 1 tbsp oil.Add garlic and green chillies,saute well,add 1/2 cup of water.boil them for 2 minutes.add capsicum,chinese chilli sauce,1tsp soya sauce,1/2tsp sugar and 1tsp corn flour. mix well.Add the fried chicken piece.Garnish with Green onions.Enjoy the chilly chicken with fried rice:)

Fried Rice

 I love Chinese dishes,especially the Fried Rice..I was searching for this recipe since long time .Finally i got it!!!I Served this with Chilli chicken.A perfect combination for the weekend lunch.Here is the recipe..Try this and enjoy it :)

Ingredients:

Jasmine Rice(use this for authentic taste) - 1 1/2 cups
Carrot (cut into lengthwise) - 1
Cabbage(shredded) - 1/4 cup
Beans(chopped) - 4tbsp
Green Peas - 3tbsp
Egg - 2(optional)
Soy sauce - 1tbsp
Vinegar - 1tbsp
Garlic Paste - 1tbsp
Capsicum(cut into lengthwise) - 1
Chinese Chili Sauce - 1tbsp
Spring Onion - 1/4 cup

Method:

 Soak the rice in water for 15 minutes.Cook the rise with salt and allow them to cool down.Refrigerate the rice for best result(i prepared the rice 1day before and kept in fridge overnight.)
In a wok,heat oil and add the garlic paste,saute well.Then add the Vegetables one by one.First add Carrot and saute well for 1minute.Then add the remaining vegetables and cook them for 4 minutes.Pull the vegetables into one side of the pan and put the egg and scramble it.You can put your choice of  cooked non -veg  here.Mix well  and Cook the vegetables  till they are soft.Add the cooked rice and mix well.Add soy sauce,vinegar and chili sauce.Mix well gently.Once they are ready garnish with Spring Onions. Serve with Chilli Chicken.

Chinese chilli sauce



This is a spicy homemade sauce .You can use this  in any chinese or indian-chinese dishes ,also use as a dipping sauce.


Ingredients:

Whole Driedred chillies - 10 no:s
Brown sugar - 2 tbsp
Chopped Garlic- 1tbsp
White vinegar - 4tbsp
Salt - to taste
Sesame oil - 2tbsp
Hot water - 1cup

Method:


Break Whole Dry Red Chilies in half and soak them in hot water for 20 minutes to soften.Drain off water and place soaked chilies in a blender.Add remaining ingredients except the sesame oil.and make a paste.keep it aside.Put a small pan on stove and just heat the sesame oil until it starts to smoke.put this over the sauce.
Store it in an airtight container and keep it in fridge.
