Selecting and Storing Fruit to Use In Summer Party Food Recipes (Twistson Snacks)

One thing we most look forward to in the summer is eating fresh seasonal foods, especially fruit. The colors, textures, and flavors of these juicy sweet goodies can make your summer party food recipes even better. But knowing how to select and store fruits properly can have some people scratching their heads.

While summer fruits can be eaten as is, used in salads, or to make smoothies, salsas, pies and tarts, their limited "shelf life" can be tricky. We pulled together a guide on selecting and storing these gems and have included some great party snack food recipes using fruit.

Let's take a look at the more popular, or common summer fruit choices. While most fruits are available year-round thanks to global shipping, when describing peak availability and freshness, summer fruits are those that are considered 'in season' from mid-June to late September.

Blackberries: Choose berries that are firm and plump, then store at room temperature or refrigerate in a single layer. These need to be used within a day or two. Wash when ready to eat.

Cherries: The stems should be flexible and green. The fruit should not have any splits, or any soft spots. They can keep at room temperature for several days, but will last longer when refrigerated. Do not remove the stems, as this will cause rapid deterioration.

Honeydew melon: Look for smooth green-ish skin and the absence of bruises. If the melon is not quite ripe, keep it in a paper bag at room temperature for 2-3 days. Once ripe, wrap in plastic and refrigerate for up to 5 days.

Mangoes: Mangoes should have a yellow- red skin and should yield a bit when pressed. The smaller ones are typically better. Store mangoes at room temperature.

Peaches: These should have a noticeable sweet scent. Select peaches that have some give, but are not mushy or hard. Leave the soft or bruised ones alone. They can keep at room temperature for a few days or for longer in the refrigerator.


Strawberries: Pick strawberries that have a good red color and the green stems in place. The smaller ones tend to have much better flavor. Keep them refrigerated in a single layer for up to two days.

Watermelon: A ripe watermelon will give a bit to pressure at the stem end and will have a sweet scent. Store these at room temperature for 2-3 days, but refrigerate after cutting.

Here are some simple party food recipes using fruit:

Mango-Peach Salsa

2 peaches peeled & diced

1 mango peeled & diced

1/2 cup chopped red onion

1 jalapeno, seeded, finely chopped

1 tsp fresh lime juice

1 Tbs vegetable oil

1/4 cup chopped fresh cilantro

Salt and pepper

Toss peaches, mango, onions, jalapeno, lime juice, olive oil and cilantro together. Season with salt and pepper and refrigerate at least one hour before serving.

Chicken Salad with grapes

1 ? pound chicken tenders

5 cups water

1 ? cups chicken broth

1/3 cup plain yogurt

1/3 cup mayonnaise

1 Tbs Dijon Mustard

1 cup seedless grapes

1 Tbs dried tarragon

Salt and pepper

Boil chicken tenders in water and broth, then dice.

Cut grapes in halves or quarters according to preference

Combine mayonnaise and yogurt, Dijon mustard, tarragon, salt, and pepper.

Add chicken and grapes

Serve on croissants or rolls.

375ml (1 1/2 cups) fish stock
Pinch of saffron threads
1 dried bay leaf
2 x 5cm strips lemon rind

1/2 cup finely shredded fresh basil
Freshly ground black pepper

Method Notes
Step 1
Heat the oil in a large saucepan over medium heat. Add the onion and capsicum and cook, stirring, for 10 minutes or until onion softens slightly. Add the garlic and cook, stirring, for 1 minute or until aromatic.
Step 2
Add the tomato, fish stock, saffron, bay leaf and lemon rind. Bring to the boil. Reduce heat to low and simmer, covered, for 15 minutes or until soup thickens slightly.
Step 3
Add the fish and cook, uncovered, for 5 minutes or until fish is just cooked.
Step 4
Ladle the soup among serving bowls. Sprinkle with basil and season with pepper. Serve immediately.

The spring vegetables and chicken breast strips stir fried with fresh ginger, the lime juice and a touch of soy sauce for a quick weeknight dinner. At home, we always enjoy making stir fries for dinner, the art of cooking veggies and protein in a wok and having dinner ready in just few minutes.

Many of us just use whatever vegetables we have on hand, a great way to clean up our refrigerators. You can just serve it over white cooked rice, quinoa, noodles or whatever. We always love the crunch of the sugar snap peas with the chicken, best crunching them raw while you are cooking.

As a super quick procedure, you can start first by using perhaps the Jaden's rice bran oil which is made from the outer layer of the rice kernel where all of the nutrients are found, which is very high in antioxidants and is perfectly suited for high heat wok cooking. But you can also use another type of oil that has a high smoke point such as sesame oil, canola or grape seed oil. This is below 200 calories, weight conscious people, this is gluten free, and low on carbohydrates, very clean that can be easily adapted for Paleo Diets.

As a Paleo note: For people you who are on a Paleo diet, you can substitute the cornstarch with arrowroot, and the rice oil with coconut oil, lastly the soy sauce with coconut liquid aminos. Here is the recipe for the SPRING STIR FRIED CHICKEN WITH SUGAR SNAP PEAS AND CARROTS. The original recipe serves 4 persons.

INGREDIENTS:

For the sauce:

1 tablespoon low sodium soy sauce (or Braggs Liquid Aminos or Tamari for GF)

1 tablespoon fresh lime juice

2 tablespoon water

1 teaspoon cornstarch

FOR THE STIR FRY:

1 pound boneless, skinless chicken breast, already sliced thin into strips

Salt to taste only

1 tablespoon rice bran oil, or canola

1 teaspoon fresh gingerroot, peeled and minced and sliced

2 teaspoon garlic, peeled and minced and chopped

1 cup sugar snap peas

1 cup of carrots, peeled and sliced into strips diagonally

Scallions to garnish

THE PROCEDURE:

In a small bowl, combine the soy sauce, the water, the lime juice, and the cornstarch. Stir them until they are smooth and the cornstarch is fully dissolved and set it aside.

Then season your chicken breast strips with salt.

Heat a large skillet or a wok over high heat. Wait until the wok is very hot, then add half of the oil and then add the chicken strips sizzling in your wok. Stir fry them occasionally until the chicken is cooked through and browned, for about 3 to 4 minutes. Remove the chicken from the wok with a slotted spoon into a plate and set aside. Reduce the heat to medium now.

Add the remaining oil into the wok. Then add the garlic and the ginger, and stir for 20 seconds. Then you can now add the sugar snap peas and the carrots or any other veggies that you may wish to add, and stir over medium high heat, until they are crisp-tender, for 3 to 4 minutes.

Return the chicken to the wok, and add the soy sauce-lime juice mixture. Mix them well and cook for 30 seconds to perhaps 1 minute. Serve immediately while they are hot.

Lemon Poached Chicken & Potato Salad

Ingredients


4 small chicken breast fillets, trimmed
1 lemon, rind removed (see hint), juiced
750g kipfler or pink fir potatoes, scrubbed
100ml extra-virgin olive oil
150g baby green beans, trimmed, halved
1 bunch asparagus, trimmed, cut into thirds crossways
1 tablespoon dill leaves, chopped
2 tablespoons chopped chives

Method

Place chicken in a large, deep frying pan with lemon rind. Cover with cold water. Bring to the boil over medium heat. Reduce heat to low and simmer for 12 minutes. Remove chicken from pan. Cool slightly. Slice across the grain.

Meanwhile, cook potatoes in a large saucepan of boiling water for 15 to 20 minutes or until tender. Using tongs, transfer to a chopping board. Stand for 10 minutes or until still warm but cool enough to handle. Peel potatoes and cut into chunks. Place in a large bowl.

Using a fork, whisk oil, 1/4 cup lemon juice and salt and pepper in a jug. Drizzle three-quarters of the dressing over potato. Stir gently to coat.

Place beans and asparagus in a heatproof bowl. Cover with boiling water. Stand for 3 minutes. Drain. Add to potato with chicken, dill and chives. Drizzle with remaining dressing. Toss gently to combine. Season with pepper. Serve.

Hint: Use a potato peeler to remove the rind from a lemon, avoiding the white pith which can make the poaching liquid taste bitter.

This recipe would take 20 mins for preparation & 30 mins to cook.

Place green beans, onions, hard -cooked egg whites nuts, and salt/pepper in a food processor and blend to a pate consistency.

Serve with light crackers.

Use Fresh Herbs to Make Appetizer Recipes Come To Life (Twistson Snacks)

Spring has sprung and it's time for a fresh start. What better way to add freshness and flavor than to use herbs? The aromas and intricate tastes that fresh herbs provide can add life to any appetizer recipe. But using herbs can be tricky. Keeping them fresh is another challenge. So let's take a look at our 8 favorite herbs and how to incorporate them into your favorite dishes.

Basil

Most often used in Italian dishes, this sweet herb has a hint of clove and licorice. Pesto is a favorite basil-based spread that can be used on pasta, crostini, even sandwiches. Whole basil leaves are one of the stars of Caprese salad where it is layered with fresh tomatoes and mozzarella cheese, then drizzled with olive oil and balsamic vinegar. It is also tasty when chopped and sprinkled over tomato soup.

We like this recipe for Corn and Basil Cakes. They can served as a side dish, or make them smaller for an easy to handle appetizer recipe.

Chives

A part of the onion family, but with a more subtle taste, chives is famous as a topping for baked potatoes.

Cilantro

This herb is often associated with "south-of-the-border" dishes and salsas. It has a strong, fresh scent and looks a lot like parsley. Actually, it is from Southern Europe and is also known as Coriander. It's actually quite versatile and tasty in soups, salads, and with fish and vegetables.

Dill

Rosemary

Sage

Tarragon

Although Native to Asia, this herb is most often used in french cooking. It has a slightly peppery and licorice flavor that pairs nicely with chicken and fish.

Fresh herbs have more flavor than dried, but they only last a few days to one week. To keep them fresh, wrap them in a damp paper towel and place in a plastic bag in the refrigerator. You can also store them stems down in a small cup with a bit of water (enough to cover about one inch of the stems) and cover with a plastic bag.

One important note about fresh herbs. Heat can destroy the flavor. Some recipes will call for them to be mixed in and cooked with other ingredients, but whenever possible it's always best to toss them into a dish at the last minute.

Ingredients:

? 2 glasses of cold water
? 5 tbsp of powdered sugar
? A pinch of black salt
? Basil leaves grounded into a paste with 1 tbsp of water
? Juice of 2 lemons
? Ice cubes
Procedure:

? In a jug transfer the basil paste
? Add the lemon juice
? Add black salt
? Add 5 tbsp of sugar
? Stir well
? Add the ice cubes
? Add 2 glasses of water
? Stir well

Recipe for Chilled Cucumber and Mint Soup By Asha Khatau from India Food Network

Ingredients:

? 450g cucumber, peeled, sliced and salted
? 2 cups thick yoghurt
? 2 cups cold water
? 2 tbsp lemon juice
? 1/2 cup vegetable stock
? 6-7 cloves garlic
? 2 tbsp fresh mint leaves
? Salt to taste

Procedure:
? Put the cucumbers in a liquidiser
? Add the yoghurt
? Ice cold water
? Lemon juice
? Vegetable stock
? Garlic
? The mint leaves
? And finally salt to taste
? Churn together till well blended
? Tip - This drink/ soup is best enjoyed on a hot summer day
? Your Chilled cucumber & mint soup is ready to serve

Tip - Discard the water remaining in the cucumber bowl to avoid a bitter taste

Recipe for Falafel Salad By Asha Khatau from India Food Network

Ingredients:

? 4-5 cups of mixed salad greens, torn with hand and soaked in ice cold water (you can either use iceberg lettuce, romain lettuce, lollo rosso or a mixture of all),
? ? cup green olives, sliced
? ? tomatoes, deseeded and cut into cubes
? 1 green cucumber, sliced and halved
? ? cup spring onions, sliced
? 6-8 falafel bullets (green gram soaked overnight have been pasted and made into bullets)
? 7-8 mint leaves, torn roughly with hands
? ? cup feta cheese, crumbled
? 1 tsp sumac
? For dressing:
? ? cup thick yogurt
? 2 tbsp lemon juice
? ? cup ice cold water
? 2 tbsp virgin olive oil
? 2 tbsp tahini paste
? Salt and pepper to taste
? Mild paprika for garnish
Procedure:

? Start by putting all the salad ingredients in a bowl
? Put the lettuce leaves first
? Scatter the sliced olives over the lettuce leaves
? Add tomatoes
? Add cucumber
? Add spring onions
? Add mint leaves
? Add feta cheese
? If the feta cheese appears somewhat gooey, cut it with the edge of a knife
? Add 1 tsp sumac
? Sumac adds a nice tangy flavour to the salad
? Place the falafel bullets last
? You can either use whole falafel bullets or cut them into two as per your convenience
? Keep the salad in the refrigerator and allow it to chill for a while
? For dressing:
? All the ingredients have to go into a blender
? Start with the yogurt
? Add 2 tbsp tahini paste
? Add 2 tbsp lemon juice
? Add 2 tbsp extra virgin olive oil
? Add salt and pepper as per taste
? Add about ? cup of chilled water
? Shut the lid of the blending jar and churn it in the liquidizer
? Add dressing as per your requirements
