Gujia

 Wishing you all a very happy Diwali :)

Ingredients:
For Crust
All purpose flour/maida- 1cup
Rava - 1tbsp
Oil -2tbsp
Warm water- as required
For Filling
Milk powder - 1cup
Whipping cream -1/2cup
Dessicated coconut - 1/2cup
Almonds,sliced - 1/4cup
Sugar - 2tbsp
Cardmom powder - 1/2tsp
For Garnishing
Sugar - 1/2cup
Water - 1/4cup
Sliced almonds &pistachios - as reqd



Method:
Crust
In a bowl mix together maida,rava and oil.Add enough water to make a smooth dough.cover and keep it aside.
Filling
Heat a pan ,add whipping cream and milk powder.Cook on medium heat until the mixture starts leaving the sides.Switch off the heat and add coconut,almonds,sugar and cardmom powder.Mix well.Keep aside.

Mix 2tbsp of water with 1tbsp of maida to make a paste.set aside.

Making the Gujias
Knead the dough and divide into 20 equal sized balls.Roll each ball into about 4-inch diameter.
Dip your finger in the flour paste and spread it around the rim of the rolled dough,but just on the half the circle.
Put the filling in the center and fold it into a semi circle.Press the edges together with your fingers.Make sure the edges are completely sealed.Deep fry them in hot oil.

Garnishing
Boil the sugar and water on medium heat until the syrup is one thread consistency
Dip the gijias into the syrup and coat well.Place the gujias on a wire rack.Garnish the gujias with sliced almonds and pistachios while they are still moist with syrup.

Badam Halwa

Ingredients:

 Badam/almonds - 2cups
Milk - 2cups
Sugar - 11/2cups (Increase according to your taste)
Pinch of saffron
1/4 cup Ghee
Pinch of yellow food color(optional)

Method:

Soak almonds in hot water for 15 minutes.Remove the skin and grind into a coarse paste with milk.Soak saffron threads in 2tbsp of milk.
Heat 1tbsp of ghee in a thick bottomed pan.Add pureed badam ,sugar and soaked saffron with milk and stir it continuously .Add the rest of ghee and food color.Keep stirring them till halwa becomes thick.Pour the halwa
into a greased dish.Allow to cool.Garnish with almonds.

Rava laddu


Ingredients:

Rava - 1cup
Sugar-3/4 cup
Ghee- 2tbsp
Milk -1/4cup
Grated Coconut - 1/2cup
Cardmom powder - 1/4tsp
Cashews & Raisins for garnishing

Method:

Heat  ghee in a pan.Fry the cashews and raisins and keep it aside.In the same pan add rava and roast it on low flame  until you get a nice aroma.
When the rava turns light brown add coconut , sugar and cardmom powde.Stir for 3-4 minutes.
Keep aside and cool for 3 minutes.Add milk ,cashews and raisins, mix well.When the mixture is warm make balls out of it.

Unniyappam - My 100th Post!!!



Yeah!!! 10 months of blogging and finally 1 reached my 100th post!.Thanks alot for your love and support my friends. I think the main achievement is i got some lovely friends through this.
So to celebrate this wonderful event I made this yummy sweet .

For me Unniyappam is related to Vishu.Its a must for Vishu in my hometown-Kannur. So I am a bit nostalgic about this :) My mom makes this often when we have guests.The main ingredient for this is unroasted rice flour which we need to make ourself. So here is  my mom's Recipe ..

Ingredients:

Raw rice - 2 cups (soaked for 2-3 hrs)
All purpose flour(Maida) - 1/2cup
Jaggery  - 1/2kg
Small Banana - 4-5
Sesame seeds - 2tsp
Dried coconut pieces - a handful
Cardmom - 10
Baking soda - a pinch(optional)
Oil for frying


Method:
1.Drain the soaked rice and grind it to fine power .

2.Melt jaggery with 1 cup of water.Strain it and allow to cool.
3.In a mixing bowl add all the ingredients and make a thick batter.Add extra water if necessary.The batter should be like iddly batter.
4.Allow the batter to stand for 2hrs.
5.Heat the 'Unniyappam Pan' and add oil to each impressions.
6.Fill the impressions with the batter.When one side is done flip over to other side with a fork.
7.Cook both sides until they are golden brown in colour.
8.Serve with tea :-)

Chakka Varatti(Jackfruit Jam)

Am back after a long vaccation in India.We had a great time there..but i really missed blogging and my friends:-( So here am! Back to be with you all!
Malaysia,our new place is very nice, except the fact that, the climate over here is very hot,same like Kerala.That is the only thing i don't like.Everything else is so good .Everybody knows Malaysia is one of the famous tourist destinations. 20% of the population are indians! So its a home away from home for us. :-)
Malaysia is also famous for variety of food. Here we can find out Indian,chinese,Malay,Middle-Eastern,Korean,Western,Japanese and many other types of cuisines.
Coming back to today's recipe Chakka Varatti(Jackfruit Jam).This is prepared by my MIL when we were at my hubby's home. Jack Fruits were available in plenty during that time and so one fine afternoon, she made this for us :-)

Ingredients:

Ripe Jackfruit pulps - 1kg
Jaggery - 750g
Ghee - 250g
Cardmom Powder- 1 tsp

Method:
1.Finely chop the jackfruits and steam it till it become soft.Cool it and make a paste in a blender.
2.Melt the jaggery using little water.
3.Put a thick bottomed pan in the stove(Traditionally this is made in 'Uruli'.)
4.Add ghee and jackfruit paste.Saute well.
5.Add jaggery syrup and mix well.
6.Cook on medium heat till the water is reduced.Add cardmom powder to this.
7.Stir it continuously till you get a jam consistancy.

Milk Peda




Ingredients:

Milk Powder - 1cup
Milk - 1cup
Homemade fresh paneer -1cup
Sugar -1/2cup
Butter -3tbsp
Cardmom Powder -1/4tsp
Pistachios (sliced) - 2tbsp

Method:

Heat butter in a pan .Add milk ,milk powder and paneer.Mix it well.Cook this mixture on medium heat.
Stir it continuously till the mixture starts leaving the side.The mixture looks like a soft dough when it is ready.
This should take 15 minutes.Transfer the mixture to a bowl and let it cool for some time.Add  sugar and cardmom powder to this mixture when it is lukewarm.Knead it for a minute.Make small balls out of it and
lightly press it down.Garnish with Pistachio slices.You can keep it in fridge for about a month.

 Tip:

If the Mixture is sticky put it in fridge for 10 minutes.

Fruit & Nut Chocolate Squares

Ingredients:

Milk Chocolate - 350g
Condensed milk - 1tin
Butter - 100g
Apricots (chopped) - 1/4cup
Figs(chopped) - 1/2cup
Cashews(chopped) -1/4cup
Sulthana(yellow dried grapes) -1/4cup
Maria biscuits(crushed) - 40 nos


Method:

Boil some  water in a pot .Put a glass dish on top of the pot and add the butter .When it starts to melt add the chocolate pieces and melt it well.Remove it from the heat and add the condensed milk to the melted chocolate and mix well.Add the dry fruits and nuts and mix well.Add the crushed biscuits and coat well with the chocolate mixture.Take a square shaped plate and put a butter paper in that .Pour the mixture and spread it evenly.Refrigerate it for 3 hours.

Remove the butter paper and cut into squares.

Carrot Halwa - Happy Diwali to all!!!


First of all 'HAPPY DIWALI'  to everybody.Diwali is a special day for all of us.But this year's Diwali is special one for me because, its my Hubby's Birthday!!! I love him more than anything in this world.

He likes carrot halwa a lot. So i made this  especially for him.

Ingredients:

Grated  Carrot - 5 cups
Condensed Milk - 1/2 tin
Milk - 1cup
Cardmom Powder - 1/2tsp
Ghee - 2tbsp
 Cashews and Dry grapes -1tsp each

Method:

In a thick bottomed pan add the grated carrot and milk.Boil till thick,stirring occasionally.Once it starts thickening pour the condensed milk over this.Mix it and cook well till it become almost dry.Add 1tbsp of ghee and cardmom to this and  mix well.Heat 1tbsp ghee in a small pan and fry the cashews and dry grapes.Garnish the halwa with this.Enjoy the delicious dessert!!!

Pineapple Laddu




Ingredients:

Pineapple(finely chopped)  - 1
Dessicated coconut - 3/4 cup
Sugar - 5 tbsp(adjust to taste)
Ghee - 1 tsp

Method:

In a pan add the chopped pineapple and cook the pineapple until most of the water has evaporated .Pulse it in a  mixer (just once).In the same pan add the pineapple paste, coconut and sugar .Mix well for 5 minutes.Add ghee to this ,saute well.Switch off the stove.When they are slight warm make shape into laddus.Roll them in dessicated coconut .Enjoy!!!

Banana Halwa(Nenthra Pazham Halwa)


This is a super duper Sweet.As it is clear by its name ,Nethra pazham is the main  ingredient in this Reipe.This recipe is worth trying once.I got this recipe from Sangeetha 's kothiyavunu.com.For original recipe click here.here 's my version.

Ingredients:

Nethra Pazham(extra ripe) - 3 medium
Sugar - 1 cup
Ghee - 1/2 cup
Cardmom Powder - a pinch
All purpose flour - 3tsp
Milk - 1 1/4 cup


Method:

Steam the bananas in a steamer or pressure cooker.cook well and remove the black seeds.Allow them  to cool.Make a smooth paste in a grinder.Meanwhile put a heavy bottom pan on the stove and add the milk and sugar.Boil them ,When they reach a thick consistacncy add the banana paste and mix them well.Keep on stirring.you have to be patient,it needs more time.To thicken the halwa add the flour dissolved in 1/4 cup of water.keep on stirring.When they are almost thick add the ghee little by little.Mix well till  the colour become
brown.Add cardmom powder .When the halwa is leaving the side of the pan switch off the stove and spread this to a greased plate.Allow them to cool.Cut into squares and garnish with Cashews.Enjoy!!

Sarkara Varatti



Ingredients:

2 raw Plantain/Nendran Banana
3/4 cup jaggery syrup
1/2tsp ginger powder
1/2tsp cumin powder
2tsp powdered sugar
4tbsp parboiled rice
4cardmom 
oil for frying

Method:
Dry roast parboiled rice till they pop up.make a powder with 2tsp of sugar in a mixi.
Remove the skin of banana,cut into 1/4 inch thick slices.Deep fry them until they become golden brown.(Fry them on low heat.It should be crisp)keep that in a paper towel.Boil the Jaggery syrup.When the syrup reaches a sticky consistency, sprinkle cardamom powder, ginger powder and cumin powder.Mix well.Switch of the heat.Add fried banana to this.Stir well to coat.Let it cool for 2 minutes.Then sprinkle the rice powder and sugar mixture till they coated  nicely.Let it cool.Store it in an airtight container.

Dry Fruit Laddu


Today, after lunch, we were just sitting back and enjoying a movie, when suddenly my hubby expressed his desire to enjoy something sweet... I have been thinking about this laddu for a while and then, I thought, why not I try this one! After all, it would be a nice sunday sweet...

So I started with it right away...It took me 30 minutes and my husband loved it!!!

I hope you will also enjoy trying this... Here is the recipe for "Dry Fruit Laddu"

Ingredients

Dates - 1 cup
Almonds-1/3 cup
Pistachios-1/3 cup
Cashewnuts-1/3 cup
Dry Grapes-1/3 cup
Sugar-1 tbsp
Ghee(melted butter)-2tbsp
Dessicated coconut-2-3 tbsp(optional)

Method

1. Chop the dates,almonds,pistachios,cashews,dry grapes into small pieces.

2. In a pan add ghee and first dry roast the almonds and pistachios .

3. Next roast the cashews and dry grapes and keep it aside.

4. In that same pan add the dates and melt it in a slow flame(it takes 3-5 mins).
(if you like more sweet you can add 1 tbsp sugar to this stage)

5. Mix the dates and nuts and roll it in your palms to form small laddoos.

6.finally roll them in dessicated coconut.(this is optional)

store it in an airtight container...
