Chocolate & Mixed Spices Cake






This is my all time favourite cake. It is really easy and fast to make. I found it perfect for Autumn and Winter :).








One cup is around 250 ml.



Ingredients:





3 large eggs
3 cups plain flour
3 tablespoons cocoa powder
3 teaspoons cinnamon or mixed spice mixture ( for example Lebkuchen) or Polish "Przyprawa do pierników"
2 tablespoon soda
1 cup milk
1 cup oil
1 cup sugar

Chocolate Cake with Whipped Chocolate Ganache and Cherries

I have made this cake for my good friend who is addicted to chocolate (honestly!). She really loved it so I hope you will find it tasty also :).









Ingredients for cake:



200 grams plain flour
2 tablespoon jam
180 grams sugar
1 teaspoon baking powder
0.5 teaspoon baking soda
175 grams unsalted butter, room temp.
40 grams cocoa powder

Pandan Kaya (pandan coconut curd)

Kaya is Malaysian/Singaporean/Bruneian coconut jam similar to lemon curd. Instead of lemon juice and butter, we use coconut milk. For a nicer flavour I love to add pandan leaf juice and palm sugar.To make this I have always followed my mum's method of cooking the mixture using a double boiler or bain marie.
