Elaneer(Tender Coconut) Pudding


Ingredients:

Tender Coconut water  - 2cups
Thin Scrapings of tender coconut -1cup
Agar Agar /China Grass -10g
Condensed Milk - 1/2tin
Milk - 1 1/2cup
Water - 1cup
Cherries for garnishing
Sugar -according to your taste

Method:

In a pan boil milk and  condensed milk  .Stir well.Add sugar to this.Mean while soak agar agar powder in 1 cup of water and heat on low flame till the powder completely dissolves.Strain it and pour this to milk mixture.Mix  tender coconut scrapings to this.Allow to cool and refrigerate.Decorate with chopped cherries.

Chakka (Jackfruit) Puzhukku

Ingredients:

Unripe Jackfruits(chopped Finely) - 3 cups
Turmeric powder - 1/2tsp
Grated coconut -1/2 cup
Green chilli - 3
Garlic pods - 5
Curry Leaves
Salt
Coconut Oil

Method:

Cook Jackfruit pieces in  water along with salt and turmeric powder until they are soft.
Make a paste of garlic  and greenchillies.In this add coconut and and mix it well.
Add this paste to cooked Jackfruits and stir well for 2 minutes.
Switch off the stove and add 1tsp coconut oil and curry leaves.Serve hot.

Garlic sauce by Aleksandra








My favourite sauce/dip for warm sandwiches, meat, etc.




Ingredients:



0.5 cup of mayonnaise

0.5 cup of double cream or thick yogurth

2 cloves of garlic (pressed by garlic press)

Half tablespoon of chopped parsley

Black pepper

Red pepper powder (paprica)

Salt (optional)



Mix well all ingredients.

Before serving add to fridge for about one hour.

Potato Chakkakuru Mezhukkupuratti(Stir Fried Jackfruit Seeds and Potatoes)

Ingredients:

Potato (Peeled and Sliced)- 3 ,medium
Jackfruit seeds (Sliced) -1/2cup
shallot - 3
Turmeric powder - 1/4tsp
Red chilli powder -1tsp
Curry leaves
Coconut oil
Salt

Method:

Cook the potatoes and jackfruits with salt,turmeric ,chilli powder and enough water.
Heat oil in a pan .Add sliced shallots and curry leaves.Saute well for 3 minutes.
Add the cooked Jackfruit seeds and potatoes.Stir everything and cook for another 3 minutes.
Serve with rice.

GREEN BEANS WITH BREAD CRUMBS


I love vegetables. Green beans are great source of vitamins: K, C, A and manganese. This dinner is quite common in Poland. You can serve it with potatoes and roast meat.

Malabar Style Chemmeen/Prawns Curry

 
Ingredients:
King prawns  - 300g
Tomato - 1
Green chillies - 2
Grated coconut - 1/2cup
Cumin seeds - 1/2tsp
Turmeric powder - 1/4tsp
Red chilli powder - 1tbsp
Coconut oil - 1tsp
Curry leaves
Salt
Garlic pods - 3(crushed)

Method:

1.Marinate the prawns with salt,turmeric powder and chilli powder for 1/2 an hr.
2.Heat a  claypot .Add prawns,sliced tomato,green chillies with 1 cup of water.Cook it for 10 minutes.
3.Grind coconut and cumin seeds with little water.
4.Add the paste to the curry.Cook it on low flame till its done.
5.Switch of the stove and add coconut oil,curry leaves and crushed garlic.mix it well and cover it.
6.Serve with rice.

Simple steamed aubergine 蒸茄子

Cat rescue

How do you rescue a cat or a kitten? this is a big question for today! on my way to my office this morning, I stumbled upon a kitten which was starving in the street under the hot sunshine!
The first rescue action that came into my mind was to bring some water for the kitten to rescue it from a sure death, so I went to see a cafe not too far, he was very helpful, but infortunately, when I poured a little water near the cat's mouth and even on it, the cat didn't care about it at all, I guess it was too late for the poor kitten to feel or see ant shed of light anymore!
So the kitten couldn't be rescued and starved in its place!
sorry if this was not a recipe! I will compensate very soon with some amazing cat treats that are to come, and I will see what meal I can prepare specifically for CAT RESCUE so that no poor animals will ever starve in the street never again, hallelujah.

Unniyappam - My 100th Post!!!



Yeah!!! 10 months of blogging and finally 1 reached my 100th post!.Thanks alot for your love and support my friends. I think the main achievement is i got some lovely friends through this.
So to celebrate this wonderful event I made this yummy sweet .

For me Unniyappam is related to Vishu.Its a must for Vishu in my hometown-Kannur. So I am a bit nostalgic about this :) My mom makes this often when we have guests.The main ingredient for this is unroasted rice flour which we need to make ourself. So here is  my mom's Recipe ..

Ingredients:

Raw rice - 2 cups (soaked for 2-3 hrs)
All purpose flour(Maida) - 1/2cup
Jaggery  - 1/2kg
Small Banana - 4-5
Sesame seeds - 2tsp
Dried coconut pieces - a handful
Cardmom - 10
Baking soda - a pinch(optional)
Oil for frying


Method:
1.Drain the soaked rice and grind it to fine power .

2.Melt jaggery with 1 cup of water.Strain it and allow to cool.
3.In a mixing bowl add all the ingredients and make a thick batter.Add extra water if necessary.The batter should be like iddly batter.
4.Allow the batter to stand for 2hrs.
5.Heat the 'Unniyappam Pan' and add oil to each impressions.
6.Fill the impressions with the batter.When one side is done flip over to other side with a fork.
7.Cook both sides until they are golden brown in colour.
8.Serve with tea :-)

Brutti ma buoni







I have got idea to make brutti ma buoni from Emilio Cugnetto. I have little bit changed his recipe.
Brutti ma buoni means "Ugly but good". In my opinion those cookies are adorable! I love their taste. Very good to eat them with cafe latte or cappucino.

Pavakka/Bitter Gourd Thoran

Ingredients:

Bitter gourd - 1
Onion - 1
Turmeric powder -1/4tsp
Green chilli - 2
Coconut oil - 1tbsp
Grated coconut - 1/2 cup
Mustard - 1/2tsp
Curry leaves

Method:

1. Chop the cleaned bitter gourd and onion.
2. In a pan heat oil and splutter mustard and curry leaves.
3. Add finely chopped bitter gourd , onion,turmeric powder,salt and green chillies.

Pav Bhaji RecipePav Bhaji Recipe

Pav Bhaji is a recipe native to Maharastra and is a very popular Indian street food in Mumbai and Pune regions. Pav Bhaji is a combination of “Pav” which means bread in Marathi and “Bhaji” meaning mixed vegetables.

The origins of the Pav Bhaji goes back to the glory days of the textile mills in Mumbai when the mill workers used to have lunch breaks too short for a full meal, and so a light lunch was preferred. That is when food vendors replaced the roti and rice with bread/bun called as Pav and all the veggies were amalgamated into one spicy concoction called the 'bhaji' or mixed vegetables.

Pav Bhaji Recipe Ingredients

  • Potato - 4
  • Cauliflower – 1 cup (grated)
  • Carrots – 2 (chopped into circles)
  • Beans – 1/2 cup
  • Cabbage – 1 cup (chopped)
  • Green Peas – 1/2 cup
  • Onions – 4 (finely chopped-3 for the bhaji and 1 for garnish)
  • Tomatoes – 3 (finely chopped)
  • Ginger garlic paste – 2tbsp
  • Capsicum – 2 (finely chopped)
  • Green chilies – 4
  • Cloves – 3
  • Red chili powder – 1/2 tsp
  • Turmeric powder – 1/2 tsp
  • Coriander powder – 2 tsp
  • Garam masala – 1 tsp
  • Bhaji Pav masala – 3 tbsp (available in most indian grocery stores)
  • Cumin seeds – 1/2 tsp
  • Lemons  – 2 medium sized
  • Butter – 5 tbsp
  • Asafetida or Hing – 2 pinch
  • Salt – 2 tsp
  • Sugar – 1 tsp
  • Chopped Coriander Leaves for garnish
  • Pav or bun – as required (you can use the hot dog buns if you are abroad like in the USA)

Pav Bhaji Cooking method

  1. In a vessel boil the potatoes, mash it and keep it aside.
  2. In another vessel containing some water add carrots, cauliflower, cabbage, beans and peas. Bring the contents to a boil.
  3. Take the vessel of the heat and transfer the contents into a blender. Grind the vegetables coarsely with little water and set it aside.
  4. In a pan add 5 tbsp butter, asafetida, chopped onions, ginger-garlic paste and chopped capsicum. Keep stirring the contents gently until the onions turn translucent pink.
  5. Now add chopped tomatoes, green chilies, pav bhaji masala, red chili powder, coriander powder, turmeric powder, garam masala, cumin seeds, cloves and asafetida. Mix all the contents and simmer for 10 mins.
  6. Add the coarsely grinded mixed vegetables from step 3, salt, sugar and mix well. Simmer for another 6-8 minutes.
  7. At this stage add the mashed potatoes and mix well. Cook for another 8 minutes. While it cooks, use the back of a slotted spoon to mash the ingredients. Mash to a course texture. If required you can add another tablespoon of butter into it.
  8. Now add juice of 2 lemons and mix well. Take the pan off the heat and now the bhaji is done.
  9. In another pan or tava, melt a big dollop of butter. Since the pav or bread or bun in the center and put then on the tava facing inwards.
  10. Turn them around after a minutes and let the outside turn golden brown.
  11. Now take the pav or bun on a serving plate, add the Bhaji and garnish it with copped coriander leaves. Put some chopped onion, a piece of lemon and serve hot.
