Stir the mixture until the chocolate has melted into a goopy substance. It should not be droopy but should have a smooth consistency. Then add a quarter and a tablespoon of champagne, and a tablespoon of cognac, stir in these last two ingredients and until well mixed. Freeze the chocolate for at least an hour to firm and once it is done you can scoop the chocolate using a scooper then garnish with your choice of sugary or powdery seasoning.
