Souvlaki with chicken leftovers, feta and grilled tomatoes

Souvlaki is an excellent idea on what to do with chicken leftovers (you can also use turkey). I must admit this is one of my favourites lunch recipes and I tent to do it really often.



Ingredients for 2 large souvlaki:





2 pita breads
meat from baked 2 chicken legs
red onion, sliced
bell red pepper, sliced
feta cheese, crushed
cherry tomatoes, grilled
lettuce

Caprese di mozzarella di bufala






I love Italian cuisine. In my opinion it is the most complex and healthy diet...of course it is delicious too!

Caprese salad is really simple to do (you don't need to have any kitchen skills to make it!). It is perfect Summer dish.



Ingredients:





mozzarella
medium tomatoes (or cherry tomatoes)
some fresh basil leafs
olive oil
salt & pepper
dried basil (optional)

Tomato and red pepper cream soup






I love this soup! It is smooth and creamy. Serve it with aromatic croutons.

Ingredients:





olive
4 shallots, finely chopped
3-4 large red peppers, chopped
4 small cloves garlic, crushed
around 0,5 kg tomatoes, remove skin
some brown sugar
1 teaspoon paprika
0,5 teaspoon dried thyme
0,5 teaspoon dried tarragon
salt
1 bay leaf
