Spicy and stuffed slowly roasted chicken - Indian style By Bogdana Ivanova

Want to make a change this Christmas or holiday season? Try the Indian-style slowly roasted chicken and leave your family wanting more. Here is a spicy, Bollywood twist to your regular chicken recipe which is complete with all spicy goodness of the eastern cuisine. You can make your own changes to the amount of spices if you don?t like too much of it. You can follow the recipe with your choice of herbs and spices instead of the heavy Indian ?Garam Masala?. But if you are a fan of spicy food, look no further. High on spice and taste, this recipe for slowly roasted chicken is different from the usual recipes as it has a delicious curry stuffing inside. The double spice factor is sure to tickle your taste buds and give your loved ones a truly amazing treat.

Ingredients:
A small whole chicken washed and dried with a paper towel.
For the marinade:
Ginger garlic paste ? 2 tablespoons
Chili powder ? 1 tsp
Soya sauce ? 1 tablespoon
Pepper ? 2 tsp
Garam Masala powder (Dry roast spices like cloves, cardamom, pepper and fennel seeds and ground them into a fine powder) ? 1 tsp
Lemon juice ? 2 tablespoons
Oil ? 3 tablespoons

Salt to taste

Directions for making the slowly roasted chicken:
Mix all the marinating ingredients and make a fine paste. Make small cuts on the chicken surface using a sharp knife. Now take the marinade and rub it nicely onto the chicken, inside the cavity as well as out. Wrap the chicken in a plastic wrap and leave it in the fridge for a night or minimum 5 hours.

For the filling:
Large onions, thinly sliced ? 2
Ginger garlic paste ? a teaspoon
Paprika powder ? a pinch
Tomato, finely chopped ? 1
Cilantro ? a few sprigs
De-shelled hard-boiled eggs ? 2
Salt and pepper, to taste
Oil ? 1 tablespoon
Directions for the stuffing:
Heat a pan and add oil. Once the oil is heated, add the onions, the ginger garlic paste and saut?. Once the mixture gets nice and brown, add the paprika powder, salt and pepper. Now add the tomato and make a fine paste. Halve the hard-boiled eggs in the mix too. Add these to the mixture without breaking. Add chopped cilantro and keep aside. This is the stuffing.

Baking the slowly roasted chicken:
Remove the chicken from the fridge, place it on a roasting tray; drizzle with a bit of oil. Now place the made filling inside the chicken cavity. Sprinkle a bit of salt and pepper on top of the chicken. Preheat the oven to 150?C/300?F. Place the chicken into the oven and bake for 3 hours till the chicken is golden brown and oozing juices. Make a cut with a knife and see if it is done.

Heavenly smells will waft in your kitchen to announce that the chicken is getting roasted to perfection. Now take the chicken out of the oven, carve it using a sharp knife, and place it on a plate with the stuffing. You can make a basic salad with onions, tomato and cucumber and serve it with the slowly roasted chicken.

A chicken lasagne recipe for those evenings cinema (rajiv tiwari)

Ingredients:

* Olive Oil
* 1 onion, finely chopped
* 2 cloves of garlic, finely chopped
* 100 grams of salami, finely chopped
* 600 grams of chicken mince
* 2 tablespoons tomato pur and
* 3 teaspoons dried oregano
* 800 g can of plum tomatoes, chopped
* cup chicken stock
* 60 grams butter
* 70 grams all-purpose flour
* 600 ml milk
* freshly grated nutmeg
* 250 g no-cook lasagne sheets
* 1 block parmesan
* 100 g mozzarella cheese, grated

Directions:

1. To start making the sauce for the lasagna recipe, fry the onion and garlic in a wide Saute pan in olive oil. Keep stirring and frying till it's soft but not translucent.

2. Add in the Salamis along with the minced chicken and stir thoroughly to make sure the chicken cooks well for the lasagna sauce.

3. Let the meat cook, stirring it frequently until it's faintly browned all over. Season the sauce lasagna recipe and add the tomato, oregano, pur and chopped tomatoes and stock.

4. Bring to a boil, and allow it to cook constantly for about 20 minutes. It should be thick, red sauce that isn't watery.

5. Make the white sauce for the lasagna by melting the butter in a Saute pan. Quickly stir in the flour and let it cook for 2-3 minutes. Slowly pour in the milk, stirring constantly.


6. Keep stirring over a low flame until it thickens and bubbles, making sure it doesn't burn.

7. the grates nutmeg to add a perfect flavour for the lasagna and then add some salt and pepper. Stir thoroughly and remove it from the flame.

8. Assemble the lasagna by spreading a part of the chicken sauce on the base of the lasagna baking dish. Add another layer of lasagna noodles on top and cover.

9. Spread a thin layer of white sauce on top and grate over some parmesan cheese. Add another layer of the lasagna noodles and repeat the previous step.

10. Now pour in and spread a little more of the chicken sauce on top. Keep repeating the layers again and again till you've used up all the remaining ingredients of the lasagna. Your top layer should consist of the noodles followed by the cheese.

11. Bake the lasagna in a preheated oven for around 30-40 minutes till the dish is cooked through.

12. Your lasagna recipe is ready to be enjoyed for that much anticipated movie night!

Ingredients For Tandoori Chicken Recipe

* 5 large boneless, chicken thighs, skin removed
* ? cup bottled Tandoori marinade

Ingredients For Butter Chicken Sauce Recipe:

* 1 tablespoons butter
* ? cup onions, chopped
* ? tablespoon garlic, minced
* ? tablespoons ginger, grated
* ? teaspoons chili powder
* 1/3 teaspoon ground turmeric
* 1/3 teaspoon ground coriander
* ? teaspoon ground cinnamon
* ? teaspoon ground cumin
* ? can diced tomatoes, drained
* ? cup low sodium chicken broth
* ? tablespoon brown sugar
* Salt to taste
* Freshly ground black pepper to taste
* 4 tablespoons light sour cream
* ? tablespoon minced fresh cilantro
* ? tablespoon cashew butter

Directions For The Tandoori Chicken Recipe:

1. To make sure your chicken recipe is well cooked, pierce the raw chicken thighs in several places.

2. Place the chicken in a big separate bowl to marinate. Add in the Tandoori marinade and mix thoroughly with the chicken to ensure your recipe has the perfect flavour.

3. Marinate chicken in the fridge overnight for the best results.

4. Preheat your oven to 220? C to cook the chicken recipe.

5. Put the chicken thighs in a single layer on a baking sheet lined with foil and bake until cooked completely through. Do not overcook the chicken to avoid losing the natural juices.


6. Cool slightly and cut into cubes for the butter chicken recipe.

Directions For The Butter Chicken Sauce Recipe:

1. Melt the butter in a large pot over a medium flame.

2. Add in the onions and garlic carefully to make sure nothing splatters. Cook slowly, frequently stirring to ensure that nothing burns. Cook until onions are tender and add ginger, chili powder, turmeric, ground coriander, cinnamon and cumin. Cook for another minute till the mixture has nicely absorbed all the flavours.

3. Add in the drained tomatoes, broth, brown sugar, salt and pepper, reducing the flame to low.

4. Cover and simmer the butter chicken recipe, stirring occasionally. Cook for 10 minutes and remove from the flame.

5. Put half the sauce into a food processor and process till it's a smooth puree.

6. Add the pur?ed sauce back to pot with remaining sauce and mix well. Turn the flame back on to cook the recipe again and slowly add in sour cream, cilantro and cashew butter.

7. Add the tandoori chicken cubes and mix thoroughly.

8. Your butter chicken recipe is ready to be eaten and enjoyed!

How to Make Braised Chicken at Home?

Braised chicken, the name that can make your mouth water and this is the prime reason why you attend cooking classes and watch cookery shows on TV. Just for making this delicious dish at home. You don't need to dream about having your favorite dish which you have made at home. With some basic cookery skills and a little bit of persistence, you can make the same magic recipe in your kitchen, in your own oven. The Ingredients for your braised chicken

Preparing braised chicken

Take half of the garlic cloves and rub them over it to marinate it. Mash the balance garlic with the butter, the black pepper powder and the herbs. Spread this marinade throughout the chicken. Slice the lemon into four pieces and place it inside the chicken cavity. You need to make sure that the oven is preheated to about 400 degrees F. Arrange the chicken in a roasting bag inside a roasting tin and let the braising process least for two hours. The chicken will be roasted to perfection when the meat is cooked thoroughly and the juice is clear when you pierce the chicken with a knife. Now remove the already braised one from the roasting bag without removing the juices.

The gravy

Pour the juices from the chicken into a pan, add in the redcurrant jam. Mix corn flour and cold water to make a smooth paste, add it to the gravy, stirring continuously, and bring it to a boil, now add the Worcestershire sauce and sprinkle with salt and pepper. Let the gravy bubble for 2 - 3 minutes till it becomes thick. The gravy is ready.

Presenting the braised chicken

You can serve it with potatoes, carrots, beans and peas. Then carve it, pour a generous amount of gravy on top and serve with butter sauteed veggies like boiled peas, carrots and beans. You can add the potatoes to the roasting tin at the same time with the chicken to save time. You can, however, boil the potatoes first. The beans, peas and carrots can also be boiled to remove any raw taste.

Lemon Poached Chicken & Potato Salad

Ingredients


4 small chicken breast fillets, trimmed
1 lemon, rind removed (see hint), juiced
750g kipfler or pink fir potatoes, scrubbed
100ml extra-virgin olive oil
150g baby green beans, trimmed, halved
1 bunch asparagus, trimmed, cut into thirds crossways
1 tablespoon dill leaves, chopped
2 tablespoons chopped chives

Method

Place chicken in a large, deep frying pan with lemon rind. Cover with cold water. Bring to the boil over medium heat. Reduce heat to low and simmer for 12 minutes. Remove chicken from pan. Cool slightly. Slice across the grain.

Meanwhile, cook potatoes in a large saucepan of boiling water for 15 to 20 minutes or until tender. Using tongs, transfer to a chopping board. Stand for 10 minutes or until still warm but cool enough to handle. Peel potatoes and cut into chunks. Place in a large bowl.

Using a fork, whisk oil, 1/4 cup lemon juice and salt and pepper in a jug. Drizzle three-quarters of the dressing over potato. Stir gently to coat.

Place beans and asparagus in a heatproof bowl. Cover with boiling water. Stand for 3 minutes. Drain. Add to potato with chicken, dill and chives. Drizzle with remaining dressing. Toss gently to combine. Season with pepper. Serve.

Hint: Use a potato peeler to remove the rind from a lemon, avoiding the white pith which can make the poaching liquid taste bitter.

This recipe would take 20 mins for preparation & 30 mins to cook.

Lemon Chicken Hunan Style

* 3 large chicken breasts, boned and skinned, cut in half
* 1/4 cup flour
* 1 egg
* 1/4 teaspoon baking soda
* 2 tablespoons cornstarch
* 2 tablespoons vegetable oil
* 1 teaspoon salt
* 1 teaspoon soy sauce

Mix flour, egg, baking soda, cornstarch, oil, salt and soy sauce. Dip chicken into batter and fry until golden. Drain. Cut chicken crosswise into 1/2-inch slices. Arrange on a heated platter. Keep warm. Pour Lemon Sauce over and garnish with lemon slices.

Lemon Sauce:
* 1/2 cup water
* 1/2 teaspoon lemon zest
* 1/4 cup lemon juice
* 1/4 cup honey
* 1 tablespoon catsup
* 1/2 teaspoon chicken bouillon
* 1/2 teaspoon salt
* 1 clove garlic, minced
* 1 tablespoon cornstarch
* 1 tablespoon cold water

Heat water, lemon zest, lemon juice, honey, catsup, chicken bouillon, salt and garlic to boiling. Mix cornstarch and water and stir in. Cook and stir for 30 seconds or until thickened. Serve hot.

Food for Kids: Easy Chicken Katsu with Yasai Itame Recipe (Stephen John)

If you are worried that your kids may not be getting the right nutrition from those store-brought chicken nuggets, hotdogs, mac 'n' cheese, cereals, and oats, you can try other recipes that will be inviting to a child's picky palate. Putting in a bit of veggies into their meals will create a balanced meal good for your child's health.

Chicken Katsu is a Japanese style fried chicken that is great with rice and some veggies on the side. Many kids enjoy this particular dish because it is easy to eat like chicken nuggets or fillet. Here is an easy recipe for Chicken Katsu with Yasai Itame or stir-fried vegetables that will be different yet healthier and delicious for your kids.

Ingredients:
- 4 pieces or 5 lbs. of skinless chicken breast fillet
- garlic powder
- flour
- 2 eggs
- Japanese breadcrumbs
- oil for frying
- salt and pepper

For the Yasai Itame:
1 sliced medium onion
1 red bell pepper cut into strips
100 grams beansprouts
500 grams Julienned carrots
1 tbsp soy sauce or Worcestershire sauce
salt and pepper to taste
2 tablespoons oil

Cooking Directions:

1. For the Chicken:
- Lightly pound the chicken breast fillet with a mallet to flatten. Cover the chicken with a plastic wrap while you pound the chicken. Flatten to about 4 x 3 inches.
- Season the chicken on both sides with garlic powder, salt and pepper.
- Beat 2 eggs in a bowl. Prepare the flour in a separate container. Prepare breadcrumbs in a separate container as well.

- Using a kitchen thong, coat each piece of flattened chicken with flour, dip in eggs, and coat again with breadcrumbs. Make sure that the chicken is fully coated with the breadcrumbs.
- In a frying pan, heat oil and fry each piece of chicken in medium heat until golden brown.

2. For the Yasai Itame:
- In a separate pan, heat 2 tablespoons of oil. Combine all ingredients and stir-fry until ingredients are soft and tender. Add salt and pepper to taste.

Finishing Touches: Using a knife, cut the chicken into strips. Serve with steaming hot rice, Yasai Itame, and add store-brought Tonkatsu Sauce or ketchup for some flavoring.

If you prefer other meat like pork or beef, you can simply replace the chicken with the meat of your choice and follow the same steps. Fish is also a healthier choice.

This recipe will only take a couple of minutes of your time and will be even more enjoyable when you include your kids in the preparation. They can help in coating the chicken, setting the table, and mixing some orange juice, iced tea or lemonade that will go well with this meal. As easy as it is to prepare store-brought chicken nuggets, hotdogs, and microwaveable meals, they don't always provide the good nutrition that you child needs. Investing in their health and increasing your presence by cooking a special meal for them will be valuable for you and your family.

Masala chicken fry

Ingredients: 

Chicken -1/2kg
Coconut oil - 2to 3tbsp
Coriander powder - 11/2tbsp
Turmeric powder -1/2tsp
Garam masala - 1/2tsp
Chilli powder -1tsp
Pepper powder -1tsp
Ginger-garlic paste - 1tbsp
Curry leaves- a handful
Salt

Method:

Mix the chicken with all the ingredients above, except coconut oil.Heat a pan and cook the chicken with little water .Cook it till all the water has evaporated and add oil to this. Reduce the flame to medium -low and fry the chicken till it is brown.Serve hot.

Spicy Chicken Roast

Ingredients:

Chicken Drumsticks - 4
Lemon Juice - 1tbsp
Chopped onion -2,medium
Chopped tomato -1,big
Ginger-garlic paste -1tbsp
Green chillies -1
Chicken masala powder - 1tbsp
Garam masala powder - 1/2tsp
Coriander powder - 1tbsp
Turmeric powder - 1/4tsp
Chilli powder - 1tsp
Vinegar - 2tsp
Coconut slices - handful
Curry leaves
Oil

For Marinade:

Chicken masala powder - 1tbsp
Turmeric powder - 1/4tsp
Chilli powder - 1tsp
Pepper powder - 1/2tsp
Lemon Juice - 1tbsp
Salt

Method:

1.Wash the chicken pieces and soak in water along with 1tbsp lemon juice for 5-10 minutes.
2.Drain the water and make 2 or 3 deep slits in each pieces.
3.Prepare a marinade using the above ingredients and apply nicely to each pieces.Refrigerate it for an hour.
4.Heat oil in wide pan and saute the onions till it become translucent.
4.Add ginger-garlic paste,green chillies.
5.Add all the masala powders and mix well till it become nice dark colour.
6.Add chopped tomato ,curry leaves and vinegar.Saute well till the tomato done.
7.Add the marinated chicken pieces and mix well.Pour some water and let it cook for 2o-25 minutes.
8.Remove the lid and add the coconut slices.Stir fry the chicken pieces for another 15 minutes until the masala is completely dry  and  well coated in the chicken.
9.Serve hot with rice or chapati .

Erachi Pathiri(Fried Pathiri Suffed with chicken masala )


Ingredients:

For Dough(Pathiri)

Whole Wheat flour - 1cup
All purpose flour - 1cup
Salt
Water

For Chicken Filling

Boneless Chicken - 1/2 kilo
Turmeric Powder - 1/4tsp
Chilli powder - 1/2tsp
Green chillies - 3
Chopped Ginger -1 tsp
Chopped Garlic - 1tsp
Garam masala Powder -1/2 tsp
Chopped Onion - 1,big
Coriander leaves
Mint leaves(optional)
Coconut oil

Method:

Cook the chicken with sat,turmeric ,chilli powder,garam masala  and little water.Allow to cool . Mince the chicken and set it aside.
In a pan heat oil and add chopped ginger,garlic ,green chillies and onion.Saute well till the onion become soft.Add the minced chicken and saute for a while.Add chopped mint leaves and coriander leaves.Adjust the salt.Filling is ready.Keep it aside.
In a bowl mix together wheat flour,all purpose flour and salt.Add enough water and make a smooth dough.
Divide into equal sized small balls.Roll it and add the filling in the centre.Cover it with another pathiri.Slowly press the edges using fingers to seal all the masala in.Repeat the same process .
Heat oil in a pan .Deep fry the pathiris.Serve hot.

Chettinad Pepper Chicken

Ingredients:

Cardmom -2
Cinnomon -2 pieces
Cloves - 2
Bay leaf -1
Fennel seeds -1tsp
Curry leaves
Coriander leaves
Chicken - 1/2 kilo
Finely chopped onion - 2,medium
Finely chopped tomato - 1,big
Ginger-garlic paste -1tbsp
Chilli powder - 1tsp
Coriander powder -1tbsp
Crushed Pepper corns - 1tbsp
Lemon juice -1tsp

Method:

Heat oil in a pan.Add cinnomon,cardmom,cloves,bay leaves and fennel seeds.Saute well for a minute.Add the finely chopped onion and ginger garlic paste .Saute well till the onion becomes translucent.Add the chopped tomato and cook well.Add  chilli powder,coriander powder and curry leaves.Mix well.Add the chicken pieces .Saute for 2 minutes, So the moisture from the chicken comes out.Add enough water and salt.Close it and cook it till the chicken is done.Once the chicken pieces are done add the crushed peppercorns and mix it.Sprinkle lemon juice and  coriander leaves.Serve hot with bread or rice.

Chicken Cutlet

Ingredients:

Boneless chicken - 1/2 kilo
Turmeric powder - 1/4tsp
Chilli powder - 1tsp
salt to taste
 Chopped Onion -1,big
Chopped ginger - 1tbsp
chopped garlic -1tbsp
chopped greenchillies -3
Garam masala -1/2tbsp
Mint leaves
Coriander leaves
Boiled potato -2
Bread crumbs-as reqd
Egg white -2
Pepper powder - 1/4tsp
Method:

Cook the chicken with little bit water,turmeric,chilli powder and salt.Mince the chicken and keep it aside.
In a pan heat oil and add chopped ginger,garlic and greenchillies.Saute well.Add onion and cook it till it become soft.Add garam masala,chopped mint leaves , coriander leaves and salt.Add the minced chicken and mix well.Turn off the stove and add the mashed potato and mix well.allow it to cool.Make small balls out of it and roll into desired shapes.
In a bowl  add egg whites,pepper powder and salt.Beat well.
Dip each cutlet in egg whites and roll with bread crumbs.Deep fry it in oil.Serve hot with tomato ketchup.

Malabar Chicken Biriyani

Ingredients:

For Rice

Basmati rice - 2 cups
Cloves - 3
Cinnamon -3pieces
Cardmom -3
Ghee - 2tbsp
Water - 3cups
Rose water - 1tsp
Salt


For Chicken masala

6 big chicken pieces
4 big onions
4 big tomatoes
7Green chillies
1 big piece of ginger
6 big garlic pods
3tbsp of chopped mint leaves
3tbsp of chopped coriander leaves
2 tsp Biriyani masala(below)
1tbsp Lime  juice

Biriyani masala

Cinnomon  - 1big piece
Cardmom - 3
Cloves -3
Nutmeg -1
Caraway seeds- 1/2tsp
Fennel seeds -1/2tsp
Cumin seeds-1/2tsp
Mace-2
Dry roast all together and grind to a fine powder.


For Garnishing

Raw cashews and raisins
Saffron 2 strand
Milk -2tbsp
Coriander leaves
Method:

Preparing the  Chicken masala

1.In a pan add 5tbsp of ghee and fry the thinly sliced onions.
2.Fry them till it become crispy and nice golden   colour.Keep it aside.
We will use these fried onions  for the chicken masala and for garnishing.This will give a nice flavour to the Biriyani.
3.Crush together ginger,garlic and greenchillies.

4.In a big pan add the tomatoes and saute well till it become soft(don't need to add ghee here).
5.Add some water and cook the tomatoes.
6Add the crushed mixture and saute well.
7.Add the cleaned chicken  pieces and some water to cook the chicken.
8.Add the chopped Mint leaves and salt .Cover  and cook it till the chicken is done.
9.Add  3/4 of the fried onions and cook for 5minutes . 
10.Add garam masala,lemon juice and coriander leaves and mix well.Cover it and keep it aside.

Preparing the  Rice

1.Soak the rice for 30 minutes.
2.In a pan add 2tbsp ghee , cloves,cinnomon and cardmom.saute well for a minute.
3.Add the washed rice and saute it for sometime.
4.Pour 3cups of water and salt to the rice.
5.Add rose water and cook  rice till soft and all the water is absorbed.Keep it aside..

6.Mix saffron strands in milk and keep it aside.

Preparing Malabar Chicken biriyani

1.Take a big vessel and add the chicken masala first.
2.Add the cooked rice on top of that.
3.Sprinkle the saffron milk, raw cashews and raisins.
4.Add the remaining fried onions on top of the  rice .
5.cover it tightly and cook it on low flame for 10 minutes.
6.Serve hot with pappadam,pickle and onion raita.

Butter Chicken

Ingredients:
For Marination:

Boneless Chicken(cut into cubes) -1 1/2 cup
Lime Juice - 1tsp
Yogurt - 3tbsp
Ginger-garlic paste - 1tbsp
Kashmiri Chilli powder - 2tsp
Cumin Powder - 1/2tsp
Garam masala - 1tsp
Salt - to taste

For the Gravy

Tomato -2 medium(pureed)
Garam masala - a pinch
Kasoori methi Powder - 1/2tsp
Butter- 1tbsp
Water - 1/4cup
whipping cream - 1/4cup
Kashmiri chilli powder - 1/4tbsp

Oil - 2tbsp


Method:

First marinate the chicken with the above ingredients and keep it in the refrigerator or atleast a couple of hours. After that heat oil in a pan and cook the chicken with the marinade.Cover it and cook it on low flame
till the chicken is done.

In another pan add oil and saute the tomato puree for 2 minutes .Then add the butter , chilli powder and garam masala.Mix well.Add kasoori methi powder and water.Boil it for 2minutes.Finally pour the cream and mix it.Add the chicken and mix well.Serve with any indian bread.

Mixed Noodles




Ingredients:

Noodles -250g
Mixed vegetables(i used carrot,cauliflower,beans,green peas,red bell pepper)
Chicken breast - 2
egg -2
Soy sauce - 1tbsp
Hot and sweet chilli sauce(sambal) - 2tbsp
Spring onion - 2 tbsp
Vegetable oil - 2tbsp

Method:

Marinate the chicken with 1tbsp chilli sauce, soy sauce and salt.for half an hour.Then cook the chicken  and keep it aside.Boil the vegetables.Cook the noodles and drain them.
In a wok add oil and saute the vegetables and chicken.Add the eggs and scramble it .Than add the noodles and mix well.Add the remaining chilli sauce and saute well.Garnish with spring onions.Serve hot.
